Ingredients:
Pudhina leaves - 1 small bunch
Coriander leaves - 1/2 small bunch
Green chilies - 2
Ginger - 1 inch
Garlic - 3 pods
Salt
Onion - 1
Tomato - 1
Vegetables - Carrot and Beans cut into cubes
Rice - 1 cup; Water for rice - 3 Cups
Garam Masala - 1 spoon
Cinnamon - 1 small piece
Cloves - 3
Brinji / Bay Leaf - 1
Preparation:
1. First grind garlic, ginger, pudhina, coriander, green chilies, salt, and little water to a fine paste.
2. In a kadai, add a few drops of oil, add brinji leaf, cinnamon, and cloves and saute and splutter mustard seeds.
3. Saute chopped onion and then saute chopped tomato.
4. Saute the vegetable cubes for some time and add garam masala and saute.
5. Add the ground paste and saute for some time.
6. Add 3 cups of water. Once the water comes to a boil, add raw rice. Cover and cook.
7. Once all the water gets absorbed and the rice is cooked to tender, transfer the contents to a vessel and pressure cook for 3 to 4 whistles. Let the rice remain inside the pressure cooker until the pressure releases or for a minimum of 30 minutes.
8. Tasty Pudhina / Mint Pulao Rice is ready. Serve with Onion Raitha as accompaniment.
