Mixed Vegetable Kuruma for Chapathi, Idli, Dosa - No Oil Gravy

Ingredients:

Mixed vegetables - Carrot, Beans, Beetroot, Turnip - cut into cubes

Onion - 1

Tomato - 1


For Masala paste:

Cardamom - 1 small piece

Cloves - 2

Fennel seeds / Saunf / Sombu - 1/2 spoon

 Coconut - 3 spoons

Garlic - 4 pods

Green chilies - 2

Poppy seeds / kasa kasa - 1/2 spoon

Elachi - 1 pod


Preparation:

1. Cut vegetables including onion and tomato into cubes and pressure cook with water for 4 whistles.


2. In a mixie jar, add all the ingredients listed for masala with little water and grind to a fine coarse paste.


3. In a kadai, add the boiled vegetables, ground masala paste, and salt, add little water and boil to kuruma consistency.



4. Tasty Mixed Vegetable Kuruma is ready. Serve hot as an accompaniment for Chapathi, Idli, or Dosa.
