Big Mango (Big Kili Mooku Mango / Big Pickle Mango) - 1
Red Chilli Powder - 1 1/2 big spoon
Urugai Pai Podi / Urugai Powder / Pickle Powder - 1 1/2 big spoon
Jaggery - 2 big spoon
Salt - 4 big spoon
Sesame Oil - 4 to 5 ladles
Mustard seeds
Water - 1/2 to 3/4 cup
Preparation:
1. Wash and grate the mango.
2. In a kadai, add sesame oil and splutter mustard seeds.
3. Add the grated mango, salt, and jaggery and saute for some time.
4. Add water and allow it to cook.
5. Once it softens and forms consistency, add red chili powder, Urugai Pai Podi / Urugai Powder / Pickle Powder, and saute till oil separates.
6. Tasty Maangai Thokku | Mango Thokku is ready. Store it in an airtight container.
Notes:
1. You can also chop mango into small pieces instead of grating it.
2. Measurement of spice powders will depend upon your taste. So adjust it accordingly. Add a little less than the measurement specified in this recipe and increase it at a later stage if required.
