Ragi Adai / Ragi Rotta

Ingredients:

Ragi flour - 2 cups

Onion - 1 or 2

Green chilies - 2

Water - 1.5 cups

Tamarind water - .5 cup

Jaggery - little

Salt


Preparation:

1. In a kadai, add a few spoons of oil. Once hot, saute chopped onions and crushed green chilies (chop it finely or use mixie to grind it coarsely without water. Just one run should be fine).

2. Add water, tamarind water, jaggery, and required salt and bring to a boil. DO NOT overboil. Just until when you see the bubbles forming.

3. Add the ragi flour and switch off the flame. Mix it thoroughly.

4. Transfer the above mixture to a large plate and use your hands to bring it together to form a dough.



5. Cover the dough and let it rest for 10 to 15 mins.

6. Take a sheet and spread oil on the sheet. Take a big ball size of dough and start to pat on the sheet using your hands. If required use oil to pat it smoothly. 

7. Heat a tawa and carefully transfer the ragi rotta from the sheet to the tawa. Pour oil around and flip and cook.

8. Tasty Ragi Adai / Ragi rotta is ready. Serve hot with Tomato juice/gravy.
