Appam dosa

Ingredients:

Raw rice - 1 cup

Idli rice - 1 cup

Urad dhal - less than 1/4 cup or one handful

Methi - 1/4 spoon

Sugar - 5 spoons

Coconut - 7 to 8 spoons

Salt and soda salt


Preparation:

1. Soak rice, urad dal, and methi for 3 to 4 hours.

2. Grind it to a fine batter and leave it overnight.

3. Next day add salt, soda salt, and sugar and mix it well.

4. In a mixie, grind coconut with water to a very smooth paste and mix it with batter. Or, extract coconut milk (grind grated coconut with water and press and strain) and mix it with batter

5. Use appa kadai or dosa tawa and pat dosas like uthapam. Cover and cook. Only one side. Do NOT flip and cook.

6. Tasty appam dosa is ready. Serve it with onion tomato chutney and coconut milk (see below for preparation).


Notes:

1. Adjust sugar and coconut as per your desired taste.

2. Coconut Milk Preparation: Grind grated coconut with little water and press and strain or simply use hand and squeeze. Mix with sugar as desired.
