Preparation:

1. In a cooking vessel, cook Red Pumpkin and Mocha Avarakai (Boil or pressure cook avarakai for 4 whistles).

4. Add the above-ground powder to the cooking vessel which has cooked Red Pumpkin and Mocha Avarakai and add Tamarind extract as per your taste.

5. Further add salt, jaggery, curry, and coriander leaves and bring it to a boil.

6. Once the pulusu (Kuzhambu) is thick as per your desired consistency, add popped mustard seeds.

7. Tasty Mocha Avarakai Red Pumpkin pulusu is ready. Serve hot.

Notes:

1. This pulusu goes well as a side dish for Paal Pongal | Milk Pongal.

2. Remove the Mocha Avarakai seeds and keep them ready a day before preparation or you can buy the avarakai seeds already removed from the bean

3. Boil Mocha Avarakai first. Once it is half cooked then add Red Pumpkin (Mocha Avarakai takes longer time to cook compared to Red Pumpkin. Alternatively pressure cook avaraikai for 4 whistles) and continue to boil.

4. If you do not have time to prepare the spice powder freshly, replace it with sambar powder and add coconut paste (just grind a few spoons of coconut with water). Tastes equally good.
