Ingredients:
Pumpkin Seeds | Gummadikaya Ginjalu | | Poosani Vidhai - 1 measure
Milk - 1 1/2 or 2 measure
Sugar - 3/4 measure
Preparation:
1. Start by soaking the pumpkin seeds in warm water for 1 to 2 hours.
2. After soaking for 1 or 2 hours, wash the pumpkin seeds until the green color disappears. Slightly crush and rinse them, avoiding squeezing. Repeat this process until you observe that most of the green skin has been removed. This may take some time, so please be patient.
3. Transfer the pumpkin seeds to a mixer/grinder and blend them smoothly.
4. Take a vessel and combine milk, sugar, ground pumpkin seeds, and the water that is used for rinsing the mixer/grinder.
5. Begin boiling the mixture over low to medium heat. Avoid stirring too vigorously; gently stir it instead.
6. Once the mixture comes to a rolling boil and you notice slight lumps forming, this indicates the right consistency for the payasam. Turn off the stove.
