Peerkangai Kadayal | Ridge Gourd Kadayal

Ingredients:

Peerkangai | Ridge Gourd - 1 medium size

Onion- 1

Tomato - 1

Green chilies - 1

Salt

Mustard seeds for seasoning


Preparation:

1. Wash and peel Peerkangai | Ridge Gourd. Just peel the ridges and slightly the green skin.

2. To the boiling water, add chopped ridge gourd pieces, chopped onion, chopped tomatoes, and green chilies, and boil till everything nicely gets cooked. Once done, switch off the flame and allow it to cool down.

3. Add the above-cooled contents and required salt in a mixie and run it in pulse mode (reverse). Just twice or thrice should be fine. Do NOT run it to paste consistency.

4. In a kadai, add a few spoons of oil and splutter mustard seeds. 

5. Add the contents from the mixie and switch off the flame as soon as it starts to boil or just before boiling. 

6. Tasty Peerkangai Kadayal | Ridge Gourd Kadayal is ready. Serve with hot rice.
