Ulligadda Oorugai (Theeya Oorugai) | Chinna Vengayam Oorugai | Small Onion Pickle - Sweet Pickle

Ingredients:

Small Onion - 1/2 Kg

Tamarind - 1/4 Kg

Jaggery - 1/8 Kg or adjust as per the sweetness required

Chilli Powder - 5 - 6 tbsp

Urugai Pai Podi | Urugai Mel Podi - 4 - 5 tbsp

Salt - as required

Sesame Oil - 4 to 5 TBSP

Mustard Seeds


Preparation:

1. Peel Small Onions and wash them well.

2. Soak tamarind and extract thick juice from it and keep it aside.

3. In a mixie jar, add the small onions and run them coarsely.

4. In a kadai, add sesame oil and splutter mustard seeds.

5. Add the coarsely ground small onions and saute for some time.

6. Add the thick tamarind juice, salt, and jaggery and allow it to boil. Keep stirring in between.

7. Once the above thickens, add chili powder and continue to boil until the oil separates.

8. As the oil starts to separate, add Urugal Pai Podi | Urugai Mel Podi and adjust salt, and jaggery accordingly. Mix well and remove from the stove.





9. Tasty Ulligadda Oorugai (Theeya Oorugai) | Chinna Vengayam Oorugai | Small Onion Pickle - Sweet Pickle is ready. Store in an airtight container.
