Kambu Kool | Kambu Kali | Kambu Soru | Pearl Millet Porridge | Bajra Porridge


Ingredients:

Kambu | Pearl Millet | Bajra - as required

Water - 1 tumbler kambu kuranai : 3 tumbler water


Preparation:

1. Wash and dry the Kambu over a cloth.

2. Once it is dry, pulse it in a mixie (just one run should suffice) such that the husk gets separated.

3. Use a moram / chata / sup to winnow/remove the husk from the grain.

4. Run the husk-removed grain once again in a mixie once or twice to make kambu kurunai. Kambu Kurunai is ready.

Kambu Kurunai or Kambu Noi-making process is a bit elaborate. Alternatively, you can buy Kambu Kurunai from the store. They are readily and easily available these days. And they too taste equally good.

Kambu Kali | Kambu Soru Preparation:

5. For 1 tumbler kambu kuranai take 3 tumbler of water. Heat the water first and once it starts to boil slightly, pour the kambu kurunai and keep stirring it.



Once the kambu kali starts to thicken, pressure cook it for 5 to 6 whistles further

6. Once the kambu starts to thicken, transfer the contents into a pressure cooker and cook for 5 to 6 whistles.

7. Kambu Kali / Kambu Soru is ready.

8. Once it cools down, make balls out of it and keep it. You will not be able to make balls when the kambu is hot. Allow it to cool and then make balls out of it.

To Eat:

Method 1:

9. While the kambu is hot, mix with ghee and have it along with powdered sugar.

Method 2: 

10. Mix the kambu kali balls with curd/buttermilk and have it along with small onion and pickle. Kambu Kool / kambu soru ready.

Method 3:

11. Prepare sambar and have it along with kambu soru / kambu kali.

Notes:

1. Kambu Kurunai or Kambu Noi-making process is a bit elaborate. Alternatively, you can buy Kambu Kurunai from the store. They are readily and easily available these days. And they too taste equally good.
