Idli rice - 1 cup
Grated Tapioca or Grated Red Pumpkin - 1 cup
Tamarind - small lemon-size ball
Red chilies - 4
Salt
Mustard and Curry Leaves for seasoning
Oil for deep frying
Preparation:
1. Soak idli rice in very hot water for 3 hours.
2. Grind soaked rice, grated tapioca or red pumpkin, tamarind, red chilies, and salt with very very little water and grind to a thick batter.

3. Remove the thick batter and put it on a cloth and cover it such that excess moisture gets absorbed. Let this sit for 2 to 4 hours. After this transfer it back to a container.
4. Season the batter with spluttered mustard seeds and curry leaves and give a good mix.
5. Grease a thick polythene sheet or banana leaf, take a medium size ball of batter, flatten it a little thick with a hole in the middle, and deep fry it in hot oil.
6. Flip and cook. Once the bubbles sound reduces, remove it on a good quality tissue paper to absorb the excess oil.
7. Tasty Pulusu Vada | Pulusu Vadai is ready. Serve hot.
Notes:
1. Usually Pulusu Vada is made using grated tapioca. But replacing it with grated red pumpkin also tastes equally good.
