Mudha Kudumu with Pachi Pulusu / Arisi Kurunai / Arisi Noi Idli

Ingredients:

For Mudha Kudumu:

  • Arisi Kurunai / Arisi Noi - 2 Big Tumbler
  • Channa dal - 2 spoon
  • Moong dal - 2 spoon
  • Water - 6 Cups
  • Salt
  • Soda Salt - a pinch


For Pachi Pulusu:

  • Urad dhal - 2 spoon
  • Coconut - a handful
  • Hing
  • Turmeric - a pinch
  • Tamarind Water
  • Jaggery
  • Green chillies - 2
  • Salt
  • Curry and Coriander leaves
  • Mustard - Seasoning


Preparation:

Mudha Kudumu:

1. Soak channa dal and moon dal in water for 1 - 2 hour





2. In a vessel heat 6 cups of water with the required salt. Once the water boils, reduce the flame and pour the Arisi Kurunai and keep stirring it continuously. Add soaked channa dal, moong dal and coconut and keep stirring continuously until it thickens and comes close to upma consistency. Not too thick a consistency. You should be able to hold shape. Switch off the flame and close the container and keep it aside.



3. After a few minutes transfer the contents to a big plate, add a pinch of soda salt (optional) and sprinkle some water and use your hands to mix the mudha. This should loosen the consistency a little bit.

4. Now shape mudha kudumu as shown below


5. Pressure cook it over idli plates for 10 mins or until the dal turns soft.



6. Tasty Mudha Kudumu / Arisi Kurunai / Arisi Noi Idli is ready. Serve with Pachi Pulusu.


Pachi Pulusu:

1. In a kadai, add a few spoons of oil and roast urad dhal and hing. Set aside once it turns brown.

2. In the same kadai saute green chillies for a few minutes. Set aside.



3. In a mixie jar, add above roasted urad dhal, hing, green chillies, coconut, turmeric, and salt and grind to chutney consistency.

4. Remove to a vessel and add lots of diluted tamarind water and jaggery. Do this as per your taste.

5. Add chopped curry and coriander leaves.

6. Add spluttered mustard seeds as a seasoning for the above.



7. Tasty Pachi Pulusu is ready.
