Elantha Vadai / Jujube Fruit vadai

Ingredients:

Elantha palam / Jujube Fruit - 100 gms

Green chilies

Jaggery

Salt

Hing

Mustard seeds, curry, and coriander leaves for seasoning - Optional


Preparation:

1. Wash the fruit and soak it for a minimum of 1 hour, just in case if the fruit is too dry. Soaking will ease the pulp extraction.

2. Burst each and every fruit to check for insects. Discard fruits that are spoiled or fruits that have insects.

3. In a mixie jar, grind green chilies, salt, hing, and jaggery. Choose the measurement as per your desired taste.

4. In the same mixie jar, add the jujube fruits and give them a run. Just run once or twice.

5. Optionally add spluttered mustards, chopped curry, and coriander leaves. In my home, we add it but if you prefer to skip it you can do so.

6. Remove it to a container and leave it overnight.

7. Next day give a mix and pat elantha vadai as shown in the picture and sun dry it.

8. Flip elantha vadai the next day and sun dry it again until it gets dry (no more sticky) or black in color. You will be tempted to eat elantha vadai before it dries up :)





9. Tasty Elantha Vadai / Jujube Fruit vadai is ready. Store it in an airtight container.
