Onion - 1
Tomato - 1
Vegetables - Carrot and Beans cut into cubes
Rice - 1 cup
Water for rice - 3 Cups
Garam Masala - 1 spoon
Brinji / Bay Leaf - 1
Cloves - 3
Cinnamon - a small piece
For Grinding:
Coriander leaf - 1/2 small bunch
Green chilies - 2
Ginger - 1 inch
Garlic - 3 pods
Preparation:
1. First grind garlic, ginger, coriander leaves, green chilies, and salt with little water to a fine paste.
2. In a kadai, add a few drops of oil, add brinji leaf, cloves, and cinnamon and saute. Then splutter mustard seeds.
3. Saute chopped onion and then saute chopped tomato
4. Saute the vegetable cubes for some time.
5. Add the ground paste, and garam masala and saute for some time.
6. Add 3 cups of water and once the water boils, add raw rice. Cover and cook.

| Once the rice gets cooked transfer it to a vessel and pressure cook for 3 to 4 whistles |
7. Once all the water gets absorbed and the rice is cooked to tender, transfer the contents to a vessel and pressure cook for 3 to 4 whistles. Let the rice remain inside the pressure cooker until the pressure releases or for a minimum of 30 minutes.
8. Tasty Coriander/ Kothamalli Pulao Rice is ready. Serve with Onion Raitha as accompaniment.
