Vegetable Biriyani

Ingredients:

Basmati Rice - 1 Cup of Cooked Rice

Onion - 2

Tomato - 2

Ginger Garlic Paste

Green Chilies

Garam Masala, Red chili powder

Mint Leaves and Coriander Leaves

Carrot, Beans, Cauliflower, Peas

Fried Bread pieces

Curd

Biriyani leaves, Cloves, Cinnamon, Elachi

Oil, Ghee


Preparation:

1. Cook basmati rice and set aside. Allow it to cool to room temperature.

2. Cook vegetables and set them aside. Add little water and pressure cook for 2 whistles.

3. In a kadai, heat oil and ghee. Add biriyani leaf, cloves, cinnamon, elachi and saute.

4. Add slit onions and saute. Add ginger-garlic paste and saute.

5. Add chopped tomato and saute. Add green chilies and saute.

6. Add garam masala, red chili powder, required salt, and saute.

7. Add chopped mint leaves and saute.

8. Add cooked vegetables and saute.

9. Add curd and saute.

10. Add cooked basmati rice and mix well.

Alternatively, you can add soaked basmati rice, lightly saute and add the required water, and pressure cook for 2 whistles.

11. Add chopped coriander leaves and fried bread pieces and mix well.



12. Tasty Vegetable Biriyani. Serve hot with Onion Raitha.
